for two

6 scallops
300g broccoli
1 crushed clove of garlic
pinch chilli flakes
3 anchovies
salt and pepper
olive oil

first, make the broccoli pure. parboil the broccoli for 4-5 minutes, then leave to steam dry. in a frying pan, gently fry the garlic with chilli and anchovies until it's all mixed into a paste, then add the broccoli and cook until it's soft. pure in a blender, adding a little bit of hot water to loosen it if necessary. return to the pan and keep warm.

heat the oil in a frying pan till hot and add the scallops. don't overcrowd the pan or they will boil. fry for two minutes on one side, without moving, then turn and fry for another minute or so. don't overcook them or they will taste horrible.

put a dollop of the broccoli pure on the plate and top with 3 scallops each.
