flourless muffins


this is for when you feel like something sweet but not too sweet. wouldn't normally go for honey, but it's sunday and it's nice to make something resembling a cake. also, it takes 10 minutes to put together, so hardly any bother at all.

beware though - with all the almonds and half a cup of oil, not to mention the honey, these must be pretty high in calories.

MUFFINS
2 cups ground almonds
½ teaspoon salt
1 teaspoon bicarbonate of soda
½ cup of goji berries soaked for 10 minutes with water squeezed out
½ cup of oil
¼ cup of honey
3 eggs
½ teaspoon of vanilla essence

you mix the eggs, oil, honey, berries and vanilla in a small bowl and almonds, salt and bicarbonate of soda in the other. you stir the wet stuff into dry, mix it well (a wooden spoon is enough, you just need to mix it to combine it thoroughly) and spoon into 12 muffin cases. bake in the oven at 160C for around 25 to 30 minutes. cool on a wire rack.

i reckon you could do endless variations of this. a few nuts, or some raisins, or blueberries, a bit of lemon zest or a bit more vanilla, it would probably all work.

i eat one and promptly feel sick from indigestion. but everyone else seems to enjoy them!
